Super Bowl Pick'ins I

Everyone has their own Super Bowl traditions, even if its to simply do nothing. One thing we all do, however, is enjoy food seemingly tailor-made for football viewing.

On our Super Bowl table is homemade mozzarella sticks.

For starters, I measure almost nothing. Cooking isn't the exact science that baking requires. It's much more of an art form that allows the chef to create to his or her individual taste. However, there is a process.

To make these mozzarella sticks, you'll need a block of, well, mozzarella cheese, gluten-free bread crumbs, Italian seasoning, eggs, gluten-free flour, olive oil and marinara sauce (or gravy) for optional dipping. 

Start by heating enough olive oil to cover the bottom of the pan and fill about 1-inch high. Medium-high heat works well. Then, slice the cheese into long bricks, about 1/2-inch wide on four sides. If you're using a typical store-bought cheese, you can make the bricks the the length of the block.

Next, mix bread crumbs with Italian seasoning, as much or as little as you wish. Place in a bowl.

Crack several eggs, place in a second bowl and whisk. A generous portion of flour should be placed in a third bowl. 

When the oil starts to bubble, dip each cheese slice in flour to coat. Then, do the same with the egg and bread crumb mixtures, respectively.

Drop in the oil and allow to cook until the sticks are lightly browned. Remove and drain on paper towels. Briefly allow to cool before serving. Dip in marinara sauce and enjoy. They are delicious!
