The Wildflour Bakery/Cafe on Main Street (aka Route 206) in Lawrenceville is a 100% gluten-free dining spot. It's also incredibly unique, both in atmosphere and menu.
Housed in the former Lawrenceville Inn, the cafe looks and feels like you're in someone's home. It has intimate dining areas for serving breakfast and lunch.

We made our way into the bakery's retail area to pay our check and ended up purchasing a Nutella Danish and a couple of sugar cookies. They also sell breads, tarts and other desserts, as well as made-to-order cakes and pies.
Did I mention that EVERYTHING is gluten-free?!
According to Wildflour's website, owner/operator Marilyn Besner opened her business after seeing a need for freshly-made gluten-free foods. And, boy, does she fill that need well.

I enjoyed it especially because of the unique dishes, which appealed to my crunchy side. My dining companion has a less-adventurous palate, and was disappointed in his meal, mainly due to the lack of breakfast meats.We agreed, however, that the Danish and other foods we tried were delicious.
The meal also was reasonably priced, and served by a friendly, competent staff. Our server openly admitted it was her first day on the job, but we never would have noticed.
