A tasty challenge



We were presented with the Schar Pizza Challenge and enthusiastically accepted. The challenge required us to come up with a gluten-free pizza recipe. We had so much fun trying things out, we came up with three!

All recipes were made with Schar's frozen pizza shells. The create a generous-size meal for one person, but we shared ours between two people and added side salads. Having made pizza entirely from scratch in the past, I can attest to the fact that these gluten-free shells make things soooo much easier. And they taste good too.

White Garlic Broccoli Pizza
Our resident pizza maker, Warren, was instrumental in this recipe, created with several years of professional experience under his belt. And its delicious!

1 Schar pizza shell
2 tsps. Olive oil
1 tsp. minced garlic
¾ c. ricotta cheese
1-1 1/4 c. shredded mozzarella
1 c. cooked broccoli florets
Parmesan cheese, to taste

Place pizza stone in the oven and pre-heat oven 400 degrees. Spread olive oil evenly on the top of the pizza shell, then sprinkle minced garlic. Spoon ricotta cheese on top, leaving it in teaspoon-size clumps, then sprinkle mozzarella cheese. Amounts of both cheeses should be adjusted to desired taste.

Cook pizza 12-15 minutes, adding broccoli florets about halfway through cooking time. The florets should be distributed evenly. When cooking is completed, sprinkle Parmesan cheese to taste.

Homemade Meatball Pizza
This recipe is a great way to utilize leftover meatballs. Prepared at home, we simply substituted traditional bread crumbs for a gluten-free version, adding in traditional Italian spices and an egg to 1 pound of meat mixture (beef and chicken, in this case). All meatball ingredients were “eye-balled” to taste.

1 Schar pizza shell
1-1 ¼ c. Marinara sauce
½ tsp. fresh oregano or oregano flakes
1-1 ¼ c. shredded mozzarella
2 medium gluten-free meatballs, sliced evenly
Parmesan cheese or garlic powder, optional

Place pizza stone in the oven and pre-heat oven 400 degrees. Spread marinara sauce evenly on the top of the pizza shell. Sprinkle on oregano and mozzarella cheese, adjusting amounts for taste. Place slices of meatball evenly on top.

Cook pizza 12-15 minutes. When cooking is completed, sprinkle Parmesan cheese or garlic power to taste, if desired.



Bella’s Broccoli Pizza
Created by a child for the Schar Recipe Challenge, this creation is a kid-friendly favorite, as well as a great way to get more vegetables added to anyone’s diet.

1 Schar pizza shell
